Add the chopped vegetables into the hot fry pan and mix to coat in olive oil, sautéing every 1-2 minutes.
Cut 2 large sweet potatoes into bite-sized pieces, leaving the skins on.
After 5-6 minutes of cooking the vegetables, add the chopped sweet potatoes to the pan and mix to coat.
Cook for 25-30 minutes, stirring gently every 3-4 minutes until sweet potatoes are cooked through.
Season with sea salt and freshly cracked black pepper, mixing gently.
Remove from heat, transfer to a serving dish, and garnish with fresh parsley.
