Vegan Raita

1 cup plain vegan yogurt (preferably chilled)
1 small onion, finely chopped
1 medium-sized tomato, finely chopped
2 tablespoons fresh coriander leaves, chopped
1/4 cup cucumber, finely chopped
1/2 teaspoon roasted cumin powder
Black pepper to taste
Salt to taste
1 tablespoon oil (for tempering)
1/4 teaspoon mustard seeds (for tempering)
1/4 teaspoon red chili powder (for tempering)

In a mixing bowl, add the plain vegan yogurt and whisk until smooth and creamy.

Add the finely chopped onion, tomato, cucumber, and fresh coriander leaves to the yogurt. Mix well.

Sprinkle the roasted cumin powder and black pepper over the mixture. Add salt according to your taste. Stir everything together until well combined.

In a small saucepan, heat 1 tablespoon of oil over medium heat. Add the mustard seeds and let them crackle.

Once the mustard seeds crackle, remove the pan from heat and add the red chili powder. Stir the tadka quickly to prevent the spices from burning.

Pour the tadka over the prepared raita and mix well.

Taste the raita and adjust the seasoning if needed. You can add more salt, black pepper, or roasted cumin powder as per your preference.

Transfer the raita to a serving bowl and garnish with a sprinkle of roasted cumin powder and a few coriander leaves.

Serve the onion and tomato raita chilled as a refreshing side dish with your favorite Indian meals or as a dip for snacks.
