Melt 5 tablespoons of butter in a pan over medium heat.
Add 4 tablespoons of gluten-free flour to the melted butter and whisk immediately.
Cook the mixture for at least 5 minutes to eliminate the raw flour taste, stirring constantly.
Avoid letting the roux bubble too much; if it does, lower the heat to prevent scorching.
Remove from heat when the roux reaches a peanut butter color.
