Wash and cut all the vegetables into small pieces.
Peel the plantain and make 3 slices with each half.
Heat oil in a pan for frying the plantain.
Once the oil is hot, place the plantain in the oil and fry at medium heat until it begins to brown, then flip them.
Once the plantains are done, remove them and place on a paper towel to soak up excess oil.
In the same pan, add oil and heat it for frying the eggs.
Fry the eggs at medium heat until done, then remove them from the pan.
In the same pan with oil, add onion, garlic, green pepper, and a bit of tomato to make the salsa.
Add salt to the salsa to taste and cook for about 2 minutes until done.
Remove the salsa and pour it over the fried eggs.
Add the fried plantains to the plate.
Add a little oil to the pan and heat it for the beans.
Once hot, add onion, green pepper, and red pepper, and sauté.
Add the cooked black beans (with a bit of soup) to the sautéed vegetables.
Mix and let the soup evaporate a little, then cover.
Mix often while cooking until the soup thickens, then turn off the heat.
Add the beans to the plate.
