Remove all meat from the bone of the pork butt using a filet knife, cutting into smaller chunks.
Weigh the meat, aiming for 10 lbs of pork.
Grind the pork using a meat grinder with a 4.5 mm die.
Pass the ground meat through the grinder again to ensure even consistency.
Prepare the spice mixture: add 1.3% kosher salt, 6% black pepper, 0.1% ginger, and 4% nutmeg to the ground meat.
Add 6 large eggs to the mixture as a binder instead of water.
Mix the meat and spices by hand for about 10 minutes until the mixture is sticky and well combined.
Pack the sausage mixture tightly into the stuffing canister, ensuring there are no air pockets.
Load the canister onto the sausage stuffer and lubricate the seal with olive oil.
Prepare the casings by soaking them in warm water for about an hour.
Stuff the casings with the sausage mixture, tying off the ends tightly and ensuring there are no air pockets.
Use a sausage pricker or the back of a knife to pop any air pockets in the casings.
