Put 500 grams of pinto beans in a pot with water and soak them overnight.
Drain the beans and rinse them, then place them in a pot with fresh water.
Add 1/2 head of garlic and salt to the beans in the pot.
In a separate pan, cook bacon until it releases fat and starts to brown, no oil needed.
Add 1 chorizo to the pan with the bacon and cook for about 3 minutes.
Add chopped onion to the pan and cook for 2 minutes until softened.
Add chopped jalapeño to the pan and cook for another 2 minutes.
Finally, add chopped tomato to the pan and mix everything well.
Chop cilantro (including stems) and add it to the mixture in the pan.
Combine the cooked vegetable mixture with the beans in the pot.
Check the salt level and adjust if necessary.
Serve the frijoles charros.
