Cheesy Rice and Beans

1 cup long-grain white rice
2 cups vegetable broth
1 can (15 oz) black beans, drained and rinsed
1 cup shredded cheddar cheese
1/2 cup diced onion
1/2 cup diced bell pepper
2 cloves garlic, minced
1 tsp cumin
1/2 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1/4 cup chopped fresh cilantro (for garnish)

In a medium saucepan, heat the olive oil over medium heat.

Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.

Stir in the minced garlic, cumin, chili powder, salt, and black pepper, and cook for another minute until fragrant.

Add the rice to the saucepan and stir to coat with the vegetable mixture.

Pour in the vegetable broth and bring to a boil.

Once boiling, reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

Stir in the black beans and half of the shredded cheddar cheese until well combined.

Remove from heat and let sit for 5 minutes, covered, to allow flavors to meld.

Fluff the rice and beans with a fork, then sprinkle the remaining cheese on top and cover for a few minutes until melted.
