1

Add 1 1/2 cups of lukewarm water to 2 cups of masa harina in a mixing bowl.

2

Add a little more water to make the masa moist, resembling play-doh.

3

Cover the masa with a kitchen towel to prevent it from drying out.

4

Form balls of masa about 2 inches in diameter.

5

Place one piece of plastic in the bottom and one on the top of the tortilla press.

6

Put the masa ball in between the plastic and press down until it is about 1/4 inch thick.

7

Cook the sope on a frying pan for about a minute per side until browned and not sticking to the pan.

8

Remove the sope from the pan and pinch the rim using a clean kitchen towel or napkin.

9

Return the sope to the pan for another minute to finish cooking in shape.

10

Place the cooked sopes in a tortilla holder to keep warm.

11

Top the sopes with refried beans, lettuce, onion, salsa, and queso cotija.
