1

Put on your apron and ensure your hands are clean.

2

Gather the ingredients: 14 tomatillos, 1/2 cup Chile de Árbol, 3 garlic cloves, 1/4 onion, and salt.

3

Smash the 3 garlic cloves to easily remove the skins and set them aside.

4

Cut the 1/4 onion in half and set aside.

5

Remove the husks from the 14 tomatillos, rinse them under cold water to remove the sticky residue and dirt, and set aside.

6

Place the tomatillos in a hot skillet with the cut side down, along with the onion halves and garlic cloves.

7

Add the 1/2 cup of Chile de Árbol to the skillet.

8

Roast the tomatillos for about 5 to 7 minutes until they change color and become juicy, flipping them over for an additional 1 to 2 minutes after that.

9

Remove the garlic cloves and onion when they are nicely roasted and golden brown, being careful not to burn them.

10

Once the tomatillos are ready, transfer them to a blender along with the roasted garlic, onion, and salt to taste.

11

Blend the ingredients until you reach a chunky texture, without adding any liquid.

12

Taste and adjust seasoning if necessary.
