Vegan Cheddar Cheese

1 cup soaked cashews
4 cups nutritional yeast
1 tablespoon lemon juice
1 teaspoon apple cider vinegar
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 to 1 teaspoon turmeric
1 1/4 cups water
2 tablespoons coconut oil
2 tablespoons agar agar

Soak 1 cup of cashews overnight or for 4 hours.

In a blender, combine soaked cashews, 4 cups of nutritional yeast, 1 tablespoon of lemon juice, 1 teaspoon of apple cider vinegar, 1 teaspoon of onion powder, 1 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/2 to 1 teaspoon of turmeric. Blend until smooth.

In a small saucepan, add 1 1/4 cups of water and 2 tablespoons of coconut oil over medium heat.

Add 2 tablespoons of agar agar to the saucepan and whisk quickly to prevent clumping.

Cook the mixture for about 3 to 5 minutes until it thickens, stirring frequently. Test the thickness by dropping some into a bowl and letting it cool to see if it solidifies.

Once thickened, pour the agar agar mixture into the blender with the cashew mixture and blend quickly to combine.

Taste the mixture and adjust seasoning if necessary, adding more salt if needed, and blend again quickly.

Pour the blended mixture into a container to shape it and refrigerate overnight.

The next day, unmold the cheese and slice it for serving.
