Place the pork shoulder in a large pan and add plenty of water to almost cover it, leaving the fat side facing up.

Cover the pan and cook at 250°F (121°C) until tender, allowing the fat to render down and flavor the meat.

Prepare a chili paste by rehydrating the guajillo and chipotle chilies and blending them with the pasilla, arbol, and ancho chilies, lime juice, cumin, and garlic.
