Wash the baking potatoes thoroughly using a sponge or brush to remove all dirt.
Pierce each potato several times with a fork or a sharp knife to help them cook better.
Wrap each potato in aluminum foil with the shiny side facing in to retain heat.
Preheat the electric oven to 400°F (200°C).
Drizzle about 1 tablespoon of extra virgin olive oil over the potatoes and rub it on the skin.
Sprinkle salt and black pepper over the potatoes.
Wrap the potatoes in the foil like a little gift, ensuring they are sealed.
Place the wrapped potatoes in the preheated oven and bake for 1 hour.
After about 1 hour, remove the potatoes from the oven and let them rest.
Cut a cross in the center of each potato and add a teaspoon of butter.
Mix mayonnaise with chopped chives and parsley, and a few drops of vinegar, then drizzle over the potatoes.
