In a large pot, brown chicken in olive oil, remove.

Add onion and red pepper until soft and translucent.

Add garlic, cook 1-2 minutes.

Add chicken back to pot along with remaining ingredients except peas.

Bring to boil, reduce heat to low, cover and simmer 30-45 minutes until rice is cooked, stir occasionally.

Add peas during the final 5 minutes of cooking.
