How to Make Albondigas Soup made with Ground Turkey

Cut 2 frozen mini corns in half.

Chop zucchini, potato, celery, and carrot.

Measure out 1/4 cup of rice.

Add 1 pound of ground turkey to a bowl.

Add 1 egg, chopped onion, and cilantro to the turkey.

Add 1/4 cup of rice, 1 teaspoon each of salt and pepper, and 1/4 teaspoon of cumin to the bowl.

Mix all ingredients together to form meatballs.

Form meatballs about the size of golf balls, making 12 meatballs in total.

Bring a large pot of water to a boil.

Add meatballs to the boiling water and cook for 15 minutes before adding vegetables.

Blend mini cherry tomatoes, onion, jalapeno, chicken bouillon, cilantro, oregano, and garlic cloves with 1 cup of water to make broth.

Skim off any foam from the soup after 10 minutes of cooking meatballs.

Add chopped potato and remaining vegetables to the pot.

Pour in the blended broth and add a little water to the blender to get all the goodness out.

Add a little bit of rice for the soup.

Cover the pot and simmer for another 20 minutes.

Plate the soup and serve.
