MediterraneanXXside
15 min
easy
4 servings
Servings4
2 cups mixed stone fruits (peaches, plums, cherries)
2 cups heirloom tomatoes, chopped
1/4 cup red onion, thinly sliced
1/4 cup fresh basil leaves, torn
1/4 cup feta cheese, crumbled (optional)
3 tablespoons olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper

Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.

1

Wash and prepare the stone fruits by pitting and slicing them into bite-sized pieces.

2

Chop the heirloom tomatoes into similar-sized pieces and place them in a large mixing bowl.

3

Add the sliced red onion and torn basil leaves to the bowl with the tomatoes.

4

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper to create the dressing.

5

Pour the dressing over the tomato and onion mixture and toss gently to combine.

6

Add the sliced stone fruits to the bowl and carefully mix everything together to avoid mashing the fruits.

7

If using, sprinkle the crumbled feta cheese over the top of the salad.

8

Let the salad sit for about 10 minutes to allow the flavors to meld before serving.

9

Serve chilled or at room temperature.
