1 1/2 pounds Persian or English cucumbers
2 ripe roma tomatoes, quartered and cut into thirds
1/4 large red onion, thinly sliced
1 teaspoon kosher salt
1 red bell pepper, cored, seeded, and thinly sliced
4-5 scallions, thinly sliced
1/4 cup thinly sliced mint
1/4 cup fresh-squeezed lime juice (from about 2-3 limes)
1 tablespoon olive oil
1 teaspoon dried Mexican oregano or regular dried Mediterranean oregano
1/4 teaspoon arbol chile powder or ancho chile powder for a milder flavor

Prep the cucumbers by running the tines of a fork down the sides of each cucumber, scoring the skin (optional).

Pour the cucumbers, tomatoes, and onions into a strainer to drain any liquid but don't rinse.
