Ingredients
- ●2 large yuca (cassava) roots
- ●4 cups vegetable oil (for frying)
- ●1 tsp salt
- ●1/2 tsp black pepper
- ●1/2 tsp garlic powder (optional)
Instructions
- 1Peel the yuca roots and cut them into thick strips, similar to French fries.
- 2In a large pot, bring water to a boil and add the yuca strips. Boil for about 15-20 minutes until they are tender but not falling apart.
- 3Drain the yuca and let it cool for a few minutes.
- 4Heat the vegetable oil in a deep fryer or a large pot over medium-high heat.
- 5Once the oil is hot, carefully add the yuca strips in batches, making sure not to overcrowd the pot.
- 6Fry the yuca for about 5-7 minutes or until they are golden brown and crispy.
- 7Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil.
- 8Season the fries with salt, black pepper, and garlic powder if using.
- 9Serve hot with your favorite dipping sauce.

- 2Add the chopped onion, garlic, and bell pepper. Sauté until the vegetables are soft, about 5 minutes.
- 3Stir in the chopped tomatoes, cumin, paprika, salt, and black pepper. Cook for another 3-4 minutes until the tomatoes are softened.
- 4Add the yuca chunks to the pot and stir to combine with the vegetable mixture.
- 5Pour in the vegetable broth, ensuring the yuca is covered. Bring to a boil.
- 6Reduce the heat to low, cover the pot, and let it simmer for about 30-40 minutes, or until the yuca is tender.
- 7Once cooked, remove from heat and stir in the chopped cilantro.
- 8Serve warm as a side dish or main course.
