Ingredients

  • 2 large yuca (cassava) roots
  • 4 cups vegetable oil (for frying)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder (optional)

Instructions

  1. 1Peel the yuca roots and cut them into thick strips, similar to French fries.
  2. 2In a large pot, bring water to a boil and add the yuca strips. Boil for about 15-20 minutes until they are tender but not falling apart.
  3. 3Drain the yuca and let it cool for a few minutes.
  4. 4Heat the vegetable oil in a deep fryer or a large pot over medium-high heat.
  5. 5Once the oil is hot, carefully add the yuca strips in batches, making sure not to overcrowd the pot.
  6. 6Fry the yuca for about 5-7 minutes or until they are golden brown and crispy.
  7. 7Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil.
  8. 8Season the fries with salt, black pepper, and garlic powder if using.
  9. 9Serve hot with your favorite dipping sauce.

Instructions

  3. 3Stir in the chopped tomatoes, cumin, paprika, salt, and black pepper. Cook for another 3-4 minutes until the tomatoes are softened.
  4. 4Add the yuca chunks to the pot and stir to combine with the vegetable mixture.
  5. 5Pour in the vegetable broth, ensuring the yuca is covered. Bring to a boil.
  6. 6Reduce the heat to low, cover the pot, and let it simmer for about 30-40 minutes, or until the yuca is tender.
  7. 7Once cooked, remove from heat and stir in the chopped cilantro.
  8. 8Serve warm as a side dish or main course.
