Prepare the chocolate fudge sauce by combining double cream, granulated sugar, water, dark brown sugar, butter, vanilla, cocoa powder, and chopped dark chocolate in a saucepan over low heat until melted and smooth.

Prepare the cheesecake base by mixing the crushed Biscoff biscuits with melted butter, then press into the bottom of a lined tin.

In a separate bowl, beat together cream cheese, double cream, vanilla, and icing sugar until smooth and creamy.

Fold in half of the cookie dough balls into the cheesecake mixture, reserving the rest for decoration.

Spread the cheesecake mixture over the Biscoff base and smooth the top.

Drizzle the warmed chocolate fudge sauce over the cheesecake before adding the remaining cookie dough for decoration.
