Tinga de Pollo

Boil water in a pot and add 2 large chicken breasts, 1/2 onion, and 1 tablespoon of chicken bouillon.

Cover and cook on medium heat for about 40 minutes.

After 40 minutes, remove the chicken and let it cool a bit.

In the same pot, boil 5 tomatoes for about 8 to 10 minutes.

While the tomatoes are boiling, shred the chicken by hand or use a blender for faster results.

Once the tomatoes are soft, turn off the heat.

In a blender, add 2 cloves of garlic, the boiled tomatoes, chipotles in adobo sauce to taste (about half a can), 1 cup of the chicken cooking broth, and 1 tablespoon of chicken bouillon. Blend well until the sauce is ready.

Slice the remaining half of the onion into thin strips.

In a skillet, heat 2 tablespoons of oil, add the sliced onion, and fry until it starts to brown.

Once the onion is browned, add the sauce.
