Trim the corn by removing any loose leaves to prevent them from falling into the cooker.
Do not pre-soak the corn if using a pellet grill, as there is no open flame.
Set the pellet grill to 300 degrees Fahrenheit.
Place the trimmed corn on the grill while it comes up to temperature.
Grill the corn for 30 minutes, then flip it and grill for another 30 minutes.
Check the corn for doneness by looking for yellow husks, indicating they are cooked through.
Remove the corn from the grill and let it cool for a few minutes before handling.
Once cooled, remove the husk from the corn and insert a skewer for easier handling.
Coat the corn heavily with mayonnaise to ensure toppings stick.
Sprinkle Cotija cheese generously over the mayo-coated corn.
Add a light layer of Ash Kickin' BBQ Honey Chipotle seasoning for flavor.
Top with chopped cilantro for freshness.
Drizzle lime juice over the corn for acidity and freshness.
Finish with Valentina hot sauce to taste.
