Garlic Roasted Tomatoes

1 1/2 pounds (680 g) Roma Tomatoes, halved
4 cloves (4 cloves) Garlic, peeled
2 Tablespoons (30 ml) Olive Oil, for coating
Kosher Salt, to taste
Fresh cracked Black Pepper, to taste
1/2 teaspoon (2.5 ml) (optional) dried Herbs or fresh chopped Herbs (Basil, oregano, thyme, etc...)

Preheat the oven.

Halve the Roma tomatoes and place them in a baking dish.

Peel the garlic and add it to the dish with the tomatoes.

Drizzle olive oil over the tomatoes and garlic, coating them evenly.

Season with kosher salt and fresh cracked black pepper to taste.

If using, sprinkle dried or fresh herbs over the top.

Roast in the oven until the tomatoes are tender and slightly caramelized.
