Slice chicken breasts in the middle and cut into strips.
Drizzle olive oil over chicken and rub it in.
Mix onion powder, garlic powder, smoked paprika, cumin, ground black pepper, salt, and chili powder together.
Season chicken with the spice mixture, rubbing it in well.
Heat 2-3 tablespoons of olive oil in a cast iron skillet.
Cook chicken for about 1.5 minutes on one side, then flip and cook the other side until cooked through, then remove and set aside.
In the same skillet, add red, yellow, and green bell peppers and red onion, deglazing with lime juice.
Once veggies are softened, return the chicken to the skillet and mix everything together.
For the sauce, mix cilantro with mayo, lime juice, and chipotle in adobo sauce, adding garlic powder if desired.
Heat tortillas in a skillet with a drop of oil until warm, not crunchy.
Assemble tacos with chicken, peppers, sauce, cilantro, and fresh red onions, and serve with lime juice.
