Start with 2 kg of beef, using various cuts including brisket and ribs, and season with salt, preferably coarse salt.

Toast 8 dried guajillo chiles, 1 ancho chile, and 1 morita chile on a comal until slightly browned, being careful not to burn them.

Soak the toasted chiles in hot water for about 10 minutes until softened.

Remove seeds and veins from the chiles after soaking to reduce spiciness.

In a molcajete, grind 8 whole peppercorns, 2 cloves, and 2 pinches of cumin along with 4 cloves of garlic until fine.

In a blender, combine the ground spices with 1/2 onion, a small piece of cinnamon, a pinch of oregano, and the soaked chiles, adding a bit of water to help blend.

Add 1/4 cup of apple cider vinegar to the blender and blend until smooth.

In a large bowl, combine the beef with the blended adobo mixture, mixing well. Optionally, marinate for at least an hour or overnight for better flavor.

Roast 5 small tomatoes on the comal until charred, then blend them and add to the beef mixture.

Mix everything together thoroughly.
