Red Chilies and Korean Chilies, to taste (blended)
1/2 cup Sugar
1 cup Water
1 tbsp Sea Salt
1/3 cup Vinegar

Cut off the firm tip and bottom parts. Peel the tough leaves of the bamboo shoot to reveal the tender interior. Cut off the bumpy part from the outer layer.

Cut crosswise the bamboo shoot into 3 or 4 equal segments. Cut each segment into thin slices and then into thin strips. Rinse for 1 or 2 times to ensure it's clean.

Blend garlic, red chilies, and Korean chilies until smooth.

Place the bamboo shoot in boiling water for 20 to 30 minutes to remove any excess bitterness and clean with the water again.

Heat the pan, add the sugar and stir until the sugar turns golden brown or caramelized.

Once the sugar is caramelized, pour the water, sea salt, and vinegar and bring it to a boil and let it warm.

In a mixing bowl, add the bamboo shoot, sauce, and garlic and chilies paste. Mix together all the ingredients and toss to combine.

Put the bamboo shoot in the jar and refrigerate overnight.
