Pellkartoffeln mit Omas Quark

Wash the potatoes thoroughly and place them in a pot of salted water.
Bring the water to a boil and cook the potatoes for about 20-25 minutes, or until tender.
While the potatoes are cooking, prepare the quark mixture. In a bowl, combine the quark, sour cream, chives, parsley, salt, pepper, and lemon juice.
Mix the ingredients well until smooth and creamy.
Once the potatoes are cooked, drain them and let them cool slightly.
Peel the potatoes while they are still warm, then cut them into halves or quarters depending on their size.
Serve the warm potatoes with a generous dollop of the quark mixture on top.
