Summer Watermelon Salad

1 piece ginger, 1-inch, peeled and grated
2 tablespoons kikkoman soya sauce
2 green chillies, fresh, mild, deseeded and julienned
6 tablespoons extra virgin olive oil
1 tablespoon lime juice
1 teaspoon chinese sesame oil
½ teaspoon black pepper powder
½ teaspoon salt, or to taste
1 bunch mixed salad leaves
1 handful rocket (arugula) leaves
¼ medium watermelon, peeled, cut into 1-inch cubes, chilled in the refrigerator
1 small handful mint leaves, fresh
1 small handful coriander leaves, fresh
½ cup roasted peanuts, unsalted, roughly crushed
125 grams feta cheese

Prepare the dressing by combining grated ginger, kikkoman soya sauce, julienned green chillies, extra virgin olive oil, lime juice, chinese sesame oil, black pepper powder, and salt in a bowl.

In a large mixing bowl, combine the mixed salad leaves, rocket leaves, watermelon cubes, mint leaves, coriander leaves, and roasted peanuts.

Drizzle the dressing over the salad and toss gently to combine.

Top the salad with crumbled feta cheese before serving.
