Activate the yeast by adding it to warm water with sugar and let it rest for 8-10 minutes until foamy.
In a large mixing bowl, combine bread flour, sugar, and salt, and whisk well.
Add the activated yeast mixture and melted butter to the dry ingredients.
Knead the dough with a dough hook for 8-10 minutes until smooth and elastic, or mix by hand and knead on a flat surface.
Shape the dough into a ball and cover it with oil and plastic wrap, letting it rise in a warm place for about 1 hour until doubled in size.
Flour a flat surface and shape the dough into a log, then divide it into 8 equal pieces.
Shape each piece into a small ball, flatten it with a rolling pin, and cut the bottom edge to seal.
Optionally, stuff some rolls with mozzarella cheese before sealing.
Place the shaped rolls on a lined baking sheet and loosely cover with plastic wrap, letting them rise for another 45 minutes until doubled in size.
Brush the rolls with egg wash before baking.
Bake at 350°F for 15-20 minutes until golden brown.
