Boil water in a pot and add 1-2 tablespoons of salt.
Add 1 pound of elbow macaroni to the boiling water and cook for 8 to 10 minutes.
Drain the macaroni and place it in a large bowl to cool to room temperature.
Chop 8 ounces of cooked smoked ham and set aside.
Thinly slice pickled carrots and reserve 2 tablespoons of pickling juice.
Chop 1 large celery stick, 1/2 red bell pepper, and 4 scallions.
Shred 8 ounces of colby jack cheese.
In a bowl, combine 1 cup of mayonnaise, 4 ounces of mexican crema, 1/4 teaspoon of cracked black pepper, 1/4 teaspoon of paprika, and salt to taste.
Add the reserved pickling juice to the dressing and mix well.
Once the macaroni is cooled, add all chopped ingredients and the dressing to the bowl and mix everything together.
Refrigerate for at least one hour before serving.
