Horseradish Aioli

1 head garlic

1/2 cup mayonnaise
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 1/2 tablespoons chopped parsley

Cut off the top of a head of garlic.

Drizzle olive oil and sprinkle kosher salt on the garlic.

Wrap the garlic in tin foil tightly.

Put it in the oven at 400° for about 45 to 60 minutes until tender.

Squeeze the roasted garlic into a small bowl.

Add 2 tablespoons of prepared horseradish to the bowl.

Stir together the roasted garlic and horseradish.

Add 1/2 cup of mayonnaise, 1 tablespoon of lemon juice, and 1 teaspoon of Dijon mustard.

Add 1 1/2 tablespoons of chopped parsley and stir well to combine.

Add salt and pepper to taste and stir again.
