Gochujang Soup

3 tbsp gochujang
3 tbsp mirin
1 tsp light sodium soy sauce
1 tsp agave syrup or sugar
3 tsp gochugaru (Korean chili powder)
3 tsp fish sauce
2 tsp garlic powder
pinch of white pepper
1/2 onion
1/4 lb pork (country style ribs)
1/2 potato
1 zucchini
4-5 shiitake mushrooms
1/2 firm tofu
4-5 garlic cloves
2 jalapeño peppers
1 green onion

Prepare all the ingredients: chop the onion, potato, zucchini, shiitake mushrooms, firm tofu, garlic cloves, jalapeño peppers, and green onion.

In a pot, combine gochujang, mirin, light sodium soy sauce, agave syrup (or sugar), gochugaru (Korean chili powder), fish sauce, garlic powder, and white pepper.

Add the chopped onion and pork to the pot and sauté until the pork is browned.

Add the potato, zucchini, shiitake mushrooms, firm tofu, garlic cloves, and jalapeño peppers to the pot.

Pour in enough water to cover the ingredients and bring to a boil.

Reduce heat and let it simmer for about 10 minutes until the vegetables are tender.

Garnish with chopped green onion before serving.
