Start by cubing the chuck roast and trimming some fat off, cutting it into about 6 to 8 pieces.
Heat a skillet on medium to hot heat and add a little olive oil to prevent sticking.
Season the meat with salt and pepper on one side, then place it seasoned side down in the hot pan.
Sear the meat for about 3 minutes on one side, then flip and sear for another 3 minutes on the other side.
Transfer the seared meat into a crock pot, ensuring even coverage at the bottom.
Measure out all ingredients and prepare them for mixing.
Juice the two limes and smash the garlic cloves without chopping them.
Add the dried spices (3 bay leaves, 1 tablespoon cumin, 2 teaspoons chili powder, 1/4 teaspoon ground cloves, and 2 teaspoons oregano) over the meat in the crock pot.
Pour in 3/4 cup of chicken broth, add the juiced limes, smashed garlic, 2 tablespoons of white wine vinegar, and 4 ounces of green chilies, along with 4 chipotle peppers in adobo sauce.
Mix all ingredients in the crock pot to ensure even distribution.
Cover the crock pot and cook on low for 7 to 8 hours without opening the lid during cooking.
Chop one small onion into small pieces and add it to the crock pot, stirring it in after realizing it was forgotten initially.
For the queso, combine 1 pound of cheese (mix of white American, white sharp cheddar, and pepper jack), 1 cup of evaporated milk, and optional jalapenos in a small crock pot.
Cook the queso on high for 1 hour until melted and well combined.
After 8 hours, shred the meat in the crock pot, ensuring to remove the bay leaves.
Serve the barbacoa with taco meat, rice, salsa, corn salsa, pico de gallo, lettuce, shredded cheese, and chips.
