Clean the kitchen and wash dishes before cooking.

Gather ingredients: tomato paste, Better Than Bouillon chicken base, annatto seeds, extra virgin olive oil, garlic powder, onion powder, adobo seasoning, bay leaves, fresh cilantro, sofrito, black pepper, green and red bell peppers, onion, chicken drumsticks or thighs, jasmine rice, and olives.

Prepare annatto oil by adding half a tablespoon of annatto seeds to extra virgin olive oil.

Remove skin from chicken drumsticks and massage seasoning mix into the chicken.

Heat a Dutch oven and add 2 tablespoons of annatto oil.

Sear the seasoned chicken in the heated oil until browned on one side, then flip to brown the other side.

Remove the chicken from the pot after searing.

Add more annatto oil (1.5 to 2 tablespoons) to the pot for sautéing vegetables.

Add 1/4 cup of sofrito, 1 tablespoon of minced garlic, and the chopped peppers and onions to the pot and sauté until softened.

Add 1 tablespoon of chicken bouillon, 8 olives, 2 tablespoons of sazon, 2 tablespoons of adobo, and an 8 oz can of tomato sauce to the pot.

Add 3 cups of water, 2 cups of washed rice, and 2 bay leaves to the pot, then return the chicken to the pot.

Bring the mixture to a simmer and boil for 5 minutes.

Add 7-8 sprigs of fresh cilantro, cover the pot, and cook for 25 minutes.

After 25 minutes, remove the chicken and fluff the rice by folding it over without stirring to avoid gumminess.

Garnish with parsley and serve.
