Add taco seasoning to a resealable bag with the skirt steak.
Pour in olive oil and lime juice.
Shake the bag to combine all the ingredients together.
Squeeze as much air as possible out of the bag, then close it.
Let it marinate for about 20 minutes.
Heat a skillet over high heat, then add oil and reduce the heat to medium high.
Sear the skirt steak for 2 to 3 minutes on each side.
Notice that the steak will shrink as it cooks and will have a beautiful crust on each side, with a pinkish center for medium-rare.
Let the steak rest for 3 to 5 minutes before cutting into thin slices.
Serve the steak with chimichurri sauce on top and any other sauce or garnishes of your liking.
