MexicanMXother
30 min
easy
4 servings
Servings4
1/2 kg (1 1/2 pounds) whole tomatillos, husked and rinsed
1/2 small onion
2 Jalapeño peppers, stemmed
2 serrano peppers, stemmed
2 small garlic cloves, smashed
1 small bunch Cilantro leaves, stems removed
1-1/2 teaspoons kosher salt, adjust to taste
juice from 1/2 lime
cooking water if needed
1

Peel and remove the husks from the tomatillos and rinse under cool water.

2

In a medium pot, add 8 cups of water and bring it to a boil.

3

Add the onion, serranos, jalapenos, and tomatillos in the boiling water, then bring to a simmer and cook until the tomatillos are slightly yellow and fairly soft but not falling apart, 8 to 10 minutes.

4

Remove from heat and let it cool slightly.

5

Transfer the jalapenos, serrano, smashed garlic, and kosher salt to a blender or food processor; reserve the cooking water.

6

Blend for 5 seconds.

7

Add the tomatillos and blend to a rough texture.

8

Blend in the cilantro and blend until smooth, adding a few tablespoons of the cooking water if the salsa is too thick.

9

Taste for seasoning and adjust if necessary.

10

Let it sit for 30 minutes to let the flavors develop.

11

Stir in lime juice if using.
