Jain Chipotle Dipping Sauce

Cultural Context

Originating from the vibrant culinary traditions of Mexico, chipotle sauce is a smoky, spicy condiment that enhances a variety of dishes. Jain cuisine, which avoids certain ingredients for religious reasons, adapts this classic sauce using coconut cream instead of dairy, making it suitable for Jain dietary practices. This versatile dipping sauce has gained popularity beyond its origins, often enjoyed with snacks and appetizers in various global cuisines.

1

Chill 1 cup milk and 1 cup oil in the freezer for 3-4 hours until very cold.

2

Take out the chilled milk and oil, which should have a frosty layer.

3

In a blender, combine 1/2 cup chilled milk, 1/2 teaspoon salt, 1 tablespoon sugar, 1/4 teaspoon finely ground yellow mustard, and 1/8 teaspoon black pepper.

4

Blend until slightly thickened.

5

Gradually add 2 tablespoons of oil while blending, then blend again.

6

Add another 2 tablespoons of oil and 1 teaspoon vinegar, then blend again.

7

The mayonnaise will be slightly thin but will thicken in the fridge.

8

Transfer the mayonnaise to a bowl and check the consistency.

9

In a new bowl, take 1/2 cup of the prepared mayonnaise.

10

Add 1 tablespoon Kashmiri red chili powder, 1 tablespoon tomato sauce, and 1 teaspoon Szechuan sauce (or 1 tablespoon red chili sauce).

11

Add 1 teaspoon vinegar, 1 teaspoon sugar, and 1 teaspoon oregano, then mix well.

12

To add a smoky flavor, heat a small piece of coal, place it in a bowl, and pour a little ghee on it.

13

Cover the bowl immediately for 2-3 minutes to infuse the smoky flavor.

14

After 2-3 minutes, uncover and mix the sauce well.

15

Serve the sauce in a bowl or store in a bottle in the fridge for up to a week.
