Start by making the sauce before grilling the corn.

In a bowl, combine 1/4 cup mayo, 1/2 cup sour cream, 1/2 cup feta, and 1/2 cup fresh cilantro.

Add 1/2 teaspoon of coriander seed and 1/2 teaspoon of ground cumin to the bowl.

Blitz the mixture until smooth.

Drizzle in some avocado oil or any neutral oil and mix well.

Grill the corn until golden and charred.

Once the corn is grilled, roll it in the sauce to coat it well.

Cover the corn with more feta, and add a squeeze of lime and some additional cilantro on top.
