1

Remove the papery husks from each tomatillo and rinse them under cold water.

2

Add the tomatillos to an oven-safe dish.

3

Add jalapeños and garlic cloves to the dish.

4

Slide the baking dish under the broiler.

5

Broil until the tops of the tomatillos and peppers begin to blister, then turn them to blister and blacken all over.

6

Pour in chicken or vegetable stock (or water if you don't have stock).

7

Use a wooden spoon to scrape any browned bits stuck to the bottom of the dish.

8

Let things cool slightly, then peel away most of the skin from the peppers and remove the seeds (or leave some seeds in for spice).

9

Peel the garlic cloves and roughly chop the garlic and peppers.

10

Add the garlic, peppers, and tomatillos to a food processor along with about half of the liquid left in the dish.

11

Roughly chop some raw onion and add it to the food processor along with fresh cilantro, lime juice, and salt.

12

Process the salsa until smooth, adding more liquid if it seems too thick.

13

Serve with chips or use in your favorite recipes.
