15 garlic cloves
4 tomatoes
¼ cup ketchup
2 tsp oregano
2 tsp red chili powder (mixed in 2 tbsp water)
2 tbsp olive oil

Mix corn meal, maida, salt, ajwain, turmeric, and oil. Gradually add water to make a soft dough. Cover and let rest for 20 minutes.

Divide the dough into 22-25 equal portions and cover with a damp cloth.

Roll each portion into a 4" diameter thin circle using a little maida.

Heat oil in a pan. Once hot, lower the flame and deep fry each rolled circle until slightly colored. Drain excess oil and shape into taco shells using a rolling pin. Let cool to become crisp.

Soak rajma overnight, then pressure cook with a little salt until cooked but not mushy.

Blanch tomatoes for 10 minutes, cool, peel, and chop finely.

In a pan, heat olive oil, add parsley, onion, celery, and carrots. Stir fry until translucent.

Add chopped tomatoes and salt, cooking until soft.

Mix in cooked rajma, ketchup, red chili powder paste, oregano, basil, and garlic. Cover and cook for a few minutes without overcooking the vegetables.

To assemble, fill each taco shell with 2-3 teaspoons of rajma stuffing and top with grated cheese. Serve immediately to prevent sogginess.
