Spray a pot with non-stick spray and coat it with olive oil.
Slice smoked sausage and place it into the pot.
Stir and cook for a minute, then remove sausage from the pot.
Add chopped onions and stir, cooking for 3 minutes.
Add a little water to scrape the drippings from the bottom of the pot.
Chop garlic and jalapeño pepper, removing the seeds.
Stir garlic and minced jalapeño into the pot and cook for 3 minutes.
Grab two cans of black beans, drain and rinse one can, leaving the other can as is.
Pour both cans of black beans into the pot along with diced tomatoes.
Thoroughly combine the ingredients in the pot.
Add brown sugar and honey, along with salt, garlic powder, and ground ginger.
Stir until fully combined, then pour in adobo sauce and roughly chopped cilantro, mixing some in for cooking and saving some for garnish.
Bring to a boil, then simmer and cook for 15 minutes.
After 15 minutes, combine and place the sausage back into the pot, cooking for an additional 10 minutes.
Remove from heat and serve beans with rice, garnishing with cilantro.
