Gather your jars or containers for the seasoning mixes, preferably glass for freshness.
Start with the taco seasoning: measure out 4 tablespoons of chili powder and add it to a bowl.
Add 1 teaspoon of red pepper flakes, 1/4 teaspoon of cayenne pepper, and 1 teaspoon of oregano to the bowl.
Break up the oregano leaves a bit more to avoid chunkiness.
Add 2 teaspoons of smoked paprika and 2 tablespoons of ground cumin to the bowl.
Add 1 teaspoon of granulated garlic and 1 teaspoon of granulated onion to the bowl.
Add 1 tablespoon of kosher salt and 1 tablespoon of fresh ground black pepper to the bowl.
Mix all the spices together thoroughly.
Transfer the taco seasoning mixture into a container and seal it with a lid. Shake it well before using.
Next, prepare the fajita seasoning: measure 2 tablespoons of chili powder and add it to a bowl.
Add 4 teaspoons of Spanish paprika, 4 teaspoons of ground cumin, and 4 teaspoons of granulated garlic to the bowl.
Add 2 teaspoons of granulated onion, 2 teaspoons of Mexican oregano, 1 teaspoon of black pepper, 1 teaspoon of salt, 2 teaspoons of sugar, and 1/2 teaspoon of cayenne pepper to the bowl.
Mix all the spices together thoroughly.
Transfer the fajita seasoning mixture into a container and seal it with a lid. Shake it well before using.
Now, prepare the Tex-Mex seasoning: measure 3 tablespoons of chili powder and add it to a bowl.
Add 2 tablespoons of smoked paprika and 2 tablespoons of ground cumin to the bowl.
Add 1 tablespoon of granulated garlic and 1 tablespoon of granulated onion to the bowl.
Add 1 1/2 teaspoons of pepper flakes and 1 1/2 teaspoons of Mexican oregano to the bowl.
In a separate bowl, combine 1 1/2 teaspoons of black pepper, 1/4 teaspoon of cinnamon, 1/4 teaspoon of ground cloves, and 1 tablespoon of salt.
Mix all the spices together thoroughly.
Transfer the Tex-Mex seasoning mixture into a container and seal it with a lid. Shake it well before using.
Label each container with the contents and date.
