Green Chile Enchilada Sauce

1 ½ pounds Hatch chile peppers or Anaheim chile peppers
2 tablespoons olive oil
1 pound tomatillos papery coverings removed and diced
2 medium white onions thinly sliced
8 cloves garlic peeled and coarsely chopped
2 jalapeño peppers stem, seeds and membrane removed, chopped
1 tablespoon ground cumin
3 cups water
salt and freshly ground black pepper

Heat olive oil in a pot over medium heat.

Add sliced onions and cook until translucent.

Stir in chopped garlic and jalapeños, cooking for a few more minutes.

Add diced tomatillos and chopped Hatch or Anaheim chiles to the pot.

Sprinkle in ground cumin and season with salt and pepper.

Pour in water and bring the mixture to a simmer.

Cook until the tomatillos and chiles are tender, about 15-20 minutes.

Blend the sauce until smooth, adjusting seasoning as necessary.
