Generously apply tajin seasoning to the shrimp and corn.
Crumble cotija cheese over the mixture.
Pour a generous amount of queso quesadilla cheese onto the mixture.
Use habachi tossers to incorporate all ingredients together.
Close the Blackstone grill to let the cheese melt and everything heat up.
Chop cilantro and sprinkle it on top before serving.
Serve the mixture hot, optionally with chips or rice.
