Boil 1 cup of water in a pot.
Add 1 cup of instant rice to the boiling water.
Stir the rice and cover the pot, then turn off the heat.
Let the rice sit for 5 minutes to cook.
Chop about 2 tablespoons of cilantro.
Zest one lime, being careful to avoid the white pith.
Drain and rinse a 15 ounce can of black beans.
Drain an 11 ounce can of fiesta blend corn.
Chop a medium small fresh tomato.
After 5 minutes, fluff the rice with a fork.
Add a pinch of salt to the rice.
Pour in 1/2 cup of salsa.
Add the drained corn and black beans to the rice.
Stir in the lime zest and juice from the lime.
Add the chopped cilantro and mix everything together.
