Boil water and add 16 ounces of elbow macaroni.
Rinse the cooked macaroni with cold water to cool it down.
Finely chop 3 green onions and 1/2 red onion.
In a bowl, mix 1 cup of salsa, 1 cup of sour cream, 1/4 cup of mayonnaise, 1/2 teaspoon of cumin, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
Drain the macaroni and add the chopped green and red onion.
Add 15 ounces of rinsed and drained black beans, 3 chopped roma tomatoes, and 2 handfuls of drained canned corn.
Add a 3-ounce can of black olives and toss the mixture.
Add the dressing and mix well.
Add a couple handfuls of shredded cheddar cheese.
Taste and adjust salt if necessary.
Chill for 2 to 3 hours before serving.
