How to make Roasted Tomato Salsa, recipe by Isabel Eats

Preheat the broiler to high and set the oven rack to the highest position.

On a baking sheet, coat the vegetables (tomatoes, jalapeños, onion, garlic) in olive oil, ensuring they are fully coated.

Place the baking sheet under the broiler for 15 minutes, rotating the vegetables halfway through.

After 15 minutes, remove the vegetables, rotate them, and return to the broiler for an additional 7 minutes.

While the vegetables are broiling, prepare the blender by adding the juice from half a lime, a pinch of salt, and 10 sprigs of cilantro.

After the final 7 minutes, remove the vegetables from the oven and turn off the broiler.

De-seed one jalapeño (or both if you prefer spicier salsa) and remove the tops.

Transfer all the roasted vegetables into the blender with the cilantro, salt, and lime juice.

Blend until desired consistency is reached, then taste for seasoning and adjust salt if necessary.
