Osechi Ryori is a traditional Japanese New Year dish, consisting of various foods that symbolize prosperity, happiness, and longevity.

Ingredients

  • 1 cup black soybeans
  • 1 cup sweetened chestnuts
  • 1 cup boiled shrimp
  • 1 cup lotus root, sliced
  • 1 cup daikon radish, sliced
  • 1 cup carrot, sliced
  • 1 cup burdock root, sliced
  • 1 cup konnyaku, sliced
  • 1/2 cup soy sauce
  • 1/2 cup mirin
  • 1/4 cup sake
  • 1/4 cup sugar
  • 1 tsp salt

Instructions

  1. 1Soak the black soybeans overnight in water.
  2. 2In a pot, combine the soaked black soybeans with fresh water and simmer until tender, about 1-2 hours.
  3. 3In a separate pot, combine soy sauce, mirin, sake, sugar, and salt. Bring to a simmer to create a sweet sauce.
  4. 4Add the boiled shrimp to the sauce and simmer for 5 minutes. Remove and set aside.
  5. 5In the same pot, add the sliced lotus root, daikon radish, carrot, burdock root, and konnyaku. Simmer until tender, about 15-20 minutes.
  6. 6Add the sweetened chestnuts to the pot and simmer for an additional 5 minutes.
  7. 7Arrange the black soybeans, shrimp, and vegetables on a serving platter in an aesthetically pleasing manner.
  8. 8Drizzle the sweet sauce over the arranged dishes.
  9. 9Serve chilled or at room temperature as part of the New Year celebration.
