Osechi Ryori is a traditional Japanese New Year dish, consisting of various foods that symbolize prosperity, happiness, and longevity.
Ingredients
- ●1 cup black soybeans
- ●1 cup sweetened chestnuts
- ●1 cup boiled shrimp
- ●1 cup lotus root, sliced
- ●1 cup daikon radish, sliced
- ●1 cup carrot, sliced
- ●1 cup burdock root, sliced
- ●1 cup konnyaku, sliced
- ●1/2 cup soy sauce
- ●1/2 cup mirin
- ●1/4 cup sake
- ●1/4 cup sugar
- ●1 tsp salt
Instructions
- 1Soak the black soybeans overnight in water.
- 2In a pot, combine the soaked black soybeans with fresh water and simmer until tender, about 1-2 hours.
- 3In a separate pot, combine soy sauce, mirin, sake, sugar, and salt. Bring to a simmer to create a sweet sauce.
- 4Add the boiled shrimp to the sauce and simmer for 5 minutes. Remove and set aside.
- 5In the same pot, add the sliced lotus root, daikon radish, carrot, burdock root, and konnyaku. Simmer until tender, about 15-20 minutes.
- 6Add the sweetened chestnuts to the pot and simmer for an additional 5 minutes.
- 7Arrange the black soybeans, shrimp, and vegetables on a serving platter in an aesthetically pleasing manner.
- 8Drizzle the sweet sauce over the arranged dishes.
- 9Serve chilled or at room temperature as part of the New Year celebration.
