Download your FREE 50 Healthy Recipes e-Cookbook: https://www.elizabethrider.com/list ❤️ Coconut Bark Recipe ❤️ Makes 8 servings Prep time: 10 minutes Total time: about 6 hours to set in the freezer Ingredients: ► 2 cups plain coconut chips (I get mine at Trader Joe's) ► 4 teaspoons coconut oil ► pinch of sea salt ► goji berries, dried fruit, or any toppings you'd like ► a drizzle of honey if you'd like (use maple syrup or omit to make this vegan) Method: Add the coconut flakes, coconut oil, and a pinch of salt to a food processor and process for about 3-4 minutes, scraping down every minute, until it's smooth. Spread on a baking sheet covered in parchment paper. Top it off by adding some goji berries (or other dried fruit) and a drizzle of honey.
