Spices are very important in Turkish Cuisine, especially in the eastern part of Turkey. And we use spices not only in main dishes but in cookies too. In this episode, I am making a similar version of the famous molded Turkish cookie "Kömbe". I used spices like allspice, cardamom, cinnamon, mahlep and mastic gum to flavor. Rather than adding only all-purpose flour, I am using ground almonds, coconut flakes, starch, and semolina.
