Recipe: 12 oz shrimp (peeled, deveined, tail off) 5 cloves garlic (divided) 2 tbs olive oil (divided) 2 1/2 tbs butter (divided) 1 1/2 cups cherry tomatoes 1/2 cup dry white wine 1/2 cup chicken stock 1 cup heavy cream 2 cups baby spinach 1/8 cup pecorino (grated) Salt and pepper to taste 1/2 lb linguine Bring a pot of salted water to a boil for the pasta. While water comes to boil heat a large sauté pan to medium high heat and add 1 tbs oil and 1 tbs butter. Add the shrimp and two tbs of garlic. Sauté until shrimp is about half way cooked through. Remove shrimp to a plate and set aside. Reheat sauté pan and add 1 tbs oil and 1/2 tbs butter. Once butter melts over medium heat add the tomatoes and remaining garlic. Sauté until tomatoes burst and begin to soften. Add the wine, turn to high heat and bring to a boil. Allow to boil until reduced by half. Add the stock and reduce by half. Add the cream and reduce by half. Return the shrimp to the pan as well as the spinach season with 2 tsp salt and 1 tsp pepper. Once spinach is wilted turn off the heat and set aside. Cook pasta to al dente. Right before the pasta is done ladle about an 1/8th cup pasta water into the sauce. Strain pasta and add to the sauce along with 1 tbs butter and 1/8 cup pecorino. Toss until everything is well incorporated. Adjust salt if needed and enjoy!
