Recipe Ingredients: 🔪 1.5 lb bag baby potatoes 🔪 3 scallions, thinly sliced 🔪 1 tbsp dill, dried 🔪 1 garlic clove, finely minced 🔪 Handful of fresh parsley, finely chopped 🔪 ¼ cup red onion, small dice 🔪 ½ lemon, juiced 🔪 1 cup mayo 🔪 ½ cup Greek yogurt 🔪 1 oz feta cheese, crumbled (or more to taste) 🔪 ½ bell pepper, small dice 🔪 ½ cup olives, rough chop Instructions: 1. Boil the potatoes whole until fork-tender. Drain and set aside. 2. Preheat oven to 425°F 3. In a medium to large mixing bowl, add the mayo, yogurt, lemon juice, dill and garlic. Mix thoroughly. Fold in the scallions, parsley, olives, red onion, and bell pepper. Set aside. 4. On a foil-lined baking sheet, drizzle a little oil and rub it across the surface. 5. Smash each potato with a flat-bottomed drinking glass or canned good. Season each potato with salt and pepper. 6.
